1 - 起步

使用条件

• BrewCAD永久免费。

• BrewCAD为网页版软件，支持任何操作系统。

• 由于配方编写工作的复杂性，本软件没有针对手机端访问进行优化，请使用连接互联网的计算机使用该软件。

目前测试通过的浏览器为Firefox, Chrome和Microsoft Edge.

1.1 - 界面

界面

BrewCAD的主界面分为四个功能区域：

1. 啤酒分类
2. 批次目标
3. 批次预测
4. 标签页区域

1.2 - 啤酒分类

用户可在此区域选择所要酿造啤酒的种类、风格。这也是编辑配方的第一步。

”啤酒分类“区域内有上、下两个下拉选择框。

点击上方选择框，选择啤酒大类;

然后点击下方选择框，选择子类别。

提示：在下拉选择框中输入关键词可实现搜索功能。

选定啤酒类别后，选择框下方即时显示该类别的参数范围，以备参考。

这些参数分别为：

• 初始比重
• 终点比重
• SRM – 色度，单位为SRM
• ABV – 酒精含量百分比（以体积计）
• IBU – 国际苦度值
• BU:GU – 国际苦度值与初始比重的比值。

本软件啤酒分类依据为啤酒品酒师国际认定组织(BJCP)发布的《世界啤酒分类指南（2015年版）》。 包含27个大类（不包含28-34类増喂类别），100个子类。

1.3 - 批次目标

用户应在此区域内输入目标啤酒的具体参数：

• 初始比重。目前不支持糖度单位，如Plato， Brix等

• 色度，单位为SRM

• 批次产量，单位为升

• IBU

BU:GU由用户输入的初始比重和IBU值自动生成。无需用户手动输入。

1.4 - 批次预测

在配方编写开始时，区域内各项数值为空。

1.5 - 标签页

本工具共有6个标签页，每个标签页完成特定的配方编辑功能。

1.5.1 - 系统参数

1.系统参数

系统参数标签页

在此标签页中输入设备相关的各项参数。

• 总效率，表示整套设备对麦芽中可发酵物的利用率。普通家酿设备利用率低，可将此值设定在0.7-0.8区间； 对于精良的家酿设备或商业设备，可将此值设定在0.8-0.95之间。

• 水料比，指糖化时，糖化水质量和麦芽质量的比值。可设定在2-4区间内，建议2.5-3.2之间。

• 麦芽吸水率，被麦芽吸收而损失的水的比例。默认为每公斤麦芽吸水1.085公斤。

• 煮沸强度，麦汁煮沸时每小时水分蒸发的比例。例如，100kg麦汁煮沸1小时，0.11的煮沸强度， 蒸发掉的水分为11kg。此参数请根据自己设备的情况设定，建议将设备的蒸发强度配置在0.11

可发酵物标签页

点击标题为选择谷物的下拉选择框，滚动鼠标搜寻或键入关键词搜索想要使用的麦芽品种。

重复以上操作，选出配方所需要的全部麦芽品种。

点击“推荐”按钮，软件会根据所选麦芽的淀粉酶含量，配方的初始比重， 色度等参数生成麦芽推荐用量表。如下图所示。

提示：表中蓝色背景单元格为可编辑区域，白色背景则为只读区域。本软件出现所有表格均依此例。

谷物用量表

软件推荐的麦芽用量为最节省麦芽的方案。

算法无法量化风味，所以需要人工对推荐方案做最后的调整。

每次修改完成后，点击“更新”按钮提交数据。

此时，“批次预测”区域内与麦芽相关的参数，如糖化力， SRM等参数应已更新。

1.5.3 - 水化学

3.水化学

如果您的日常酿造操作中没有水处理这一环节，可以忽略此标签页中的内容。您仍需点击“计算”按钮， 来计算酿造水的用量。

水化学

第一步，手动填写“酿造水分析报告”表格。如果您的酿造水经过反渗透处理，经测量电导率低于50， 可将该表格各项数值修改为0。

第二步，根据目标啤酒类别，通过“选择目标离子配置”下拉选择框选择系统预设的离子配置。 如果预设配置中没有您想要的离子配比，请在下方“配置数据”表格中手动输入。

第三步，选择水盐添加方式。可以有两种方式：其一，全部水盐添加到糖化部分； 其二，糖化水、洗糟水等浓度添加。

第四步，设定目标pH。一般情况下，建议设定在5.2-5.6区间内。

第五步，点击“计算”按钮。软件将自动计算所需各种水盐的用量，调整pH所需乳酸或酸化麦芽的用量， 以及各部分的离子浓度。

“水盐添加量表”出现的无机盐，如有水合物的，均为该盐的最常见水合物形式，具体对应关系见下表：

1.5.4 - 啤酒花

啤酒花

第一步

根据您的需求设定第一个参数：“煮沸停止到强制降温间的时长”。

煮沸关火后时长

• 满足以下条件任意一条，可将此参数设定为0， 此时您可以忽略“温度估算策略”单选框，直接跳到第三步。

  • 设备容量小，降温快，5-10分钟即可降温到80摄氏度以下。

  • 配方不强调酒花风味，煮沸中后期投入的酒花量小，且alpha-酸含量低。

• 如果您的配方是偏重于酒花风味的，且设备容积较大，降温缓慢的， 请根据您的实际情况设定此时长参数。 这个时长可以设定为旋沉的时长，也可以设定为从煮沸关火到强制冷却开始之间的时长。

第二步

设置“温度估算策略”，选择两个选项中的任意一项。

1. “固定温度”，在没有条件测量关火后系统温度的情况下，可凭个人经验估算系统温度的等效平均值， 输入右边“固定温度”输入框。

2. “数据拟合”，通过实际测量3个以上的数据点，拟合得到系统的降温曲线，如图

   若拟合成功，数据表格下方会出现绿色提示框，显示拟合常数。

   此策略的优势是可以非常精确的估算系统温度变化的过程。

提示：一套设备拟合工作完成一次即可，拟合完成后，记录拟合常数b的值， 如上图绿色区域内，下次需要时，直接将您拟合得到的b值输入“拟合常数已知”输入框即可。

第三步

编辑煮沸阶段添加的酒花的品种和用量。

煮沸酒花计算

• “目标煮沸IBU”输入框默认数值为您为本配方设定的目标IBU， 如果您的配方需要在煮沸关火后投放酒花，请减去一定的IBU数值，预留给下一步 “目标旋沉IBU”。

• 点击“插入行”按钮，每行代表一种酒花的单次投放。重复点击直到行数跟您的酒花投放方式相匹配。

• 在表格的“名称”列选择酒花品种

• 在“重量”列输入各个投放的比例，这里可以输入任何成比例的数值，例如图中的2-1-1, 您也可以 写为20-10-10, 这两组数据是等效的。

• 填写“煮沸时长”列。单位为分钟。

• 如果软件提供的酒花的α-酸含量跟您手中的产品不符，请在“α-酸修正”列纠正。

• 点击计算，结果如下图。

第四步（可选）

计算关火后酒花投放的操作方式与煮沸酒花相同，请重复第三步操作。

提示： “煮沸停止到强制降温间的时长”和“目标旋沉IBU”两个参数如果任意一个为0, 此部分功能将无法使用。

第五步（可选）

选择干投酒花配置。

目前尚无有效的数学模型来准确估算干投酒花贡献的苦度，此部分仅作记录用。

1.5.5 - 酵母

酵母

酵母标签页的功能非常简单直接，表格的使用方法请参照啤酒花标签页的说明。

本软件支持酵母混合投放的计算。

提示： 表格“酵母”列支持关键词搜索，表格“细胞数”列需要用户输入起始值，如1， 若使用多种酵母，请输入各种酵母的比例。

“干麦精”列显示酵母扩陪所需要的干麦精总量。

“扩培量”为扩陪酵母所需10P麦汁的体积。

提示

1. 不同厂商所采用的发酵度测量方法和条件不统一，因此不同厂家给出的发酵度数据不具有可比性。

2. 发酵液的初始浓度不同，酵母的表现也会不同。

3. 因为上述原因，酵母的发酵度（attenuation）数据不具备准确预测的意义 (1)。

“批次预测”区域内标注（酵母计）的参数，计算过程需要用到酵母厂家提供的发酵度数据， 因此，这些计算结果只有参考意义。不能用来准确预测啤酒的发酵终点参数。

“酵母计”参数结合“极限”参数，可以帮助酿造者及时发现配方设计的缺陷， 并提供修改线索。具体请参考深度解析。

1.5.6 - 碳化

介绍

发酵完成后，啤酒中的二氧化碳含量通常会低于成品要求。

我们需要通过特殊手段为啤酒补充二氧化碳。

常规补充二氧化碳的手段有两种：

1. 自然碳化，也称为“糖发”。这个过程是指在封装前，在啤酒中添加适量的可发酵物质，例如糖， 利用糖在密闭空间中的二次发酵来补足二氧化碳。

2. 强制碳化，是指向待包装啤酒中强制注入的方式来补足二氧化碳。

糖发需要确保啤酒中含有足够数量存活的酵母。

开始

第一步

配置碳化参数和碳化目标。

1. “最高温度”参数，代表啤酒发酵完成（达到目标终点比重）后，酒体所经受的最高温度。 例如一批啤酒的正常发酵温度18摄氏度，达到比重终点后升温2摄氏度做双乙酰还原。此时，可将此参数设定为 20摄氏度。

2. “初始碳化度”，本参数根据“最高温度”参数计算生成，无需手动输入。

3. “目标碳化度”参数，用来设定成品啤酒的碳化度目标，具体数值跟啤酒品类相关，如何设定请参照 啤酒品种碳化度表。

第二步

选项一：自然碳化

选择可发酵物的种类，目前可选的发酵物为蔗糖，葡萄糖和干麦芽提取物（DME）。

然后点击“插入行”按钮，在背景为蓝色的表格列中输入包装容量和包装单位数量。 软件将计算出单位包装糖的添加量，糖的总量以及列入包装计划的啤酒总量， 该总量数据通过表格下方进度条直观显示。

自然碳化

选项二：强制碳化

强制碳化可通过压力和质量两种方式控制。

• 压力控制：通过控制啤酒碳化容器的顶部压力和啤酒温度，来控制啤酒的碳化度。 该方式的优点是操作方便，参数设定好后便无需人员维护; 缺点是周期长，通常需要 2-3周时间。

• 质量控制：通过监测碳化时消耗的二氧化碳的重量来控制啤酒碳化度。该方法优点是碳化速度快， 无需温度控制；缺点是对计量设备要求较高。
